EGGPLANT FATTOUCHE

Ingredients
1 kg. eggplant
2 tomatoes
1 onion
1 bunch of parsley
Lemon juice
Olive oil
Vegetable oil
Arabic bread
Salt

Recipe
Cut the eggplants in 3 mm. thick slices, fry them, let them cool, then cut the slices into small pieces. Cut the tomatoes into small dices. Chop the onion and the parsley. Cut some Arabic bread into small pieces and fry them in the vegetable oil until they become golden brown. Mix all the ingredients together with half the quantity of the bread. Add the sauce which consists of lemon juice, olive oil, and salt. Serve in a big dish and decorate with the remaining quantity of bread.
